Pollacks are mainly harvested with deep-sea fishing vessels, or imported from Russia and North Korean. However, this restaurant uses only world-recognized pollacks caught in Kushiro, the southeast port city of Hokkaido, Japan. Pollacks are a valued food; only 0.2% of total pollacks is caught in the North Pacific Ocean. They are the most delicious and have an excellent meat texture. A broth made with Korean seafood is poured over the high-protein, low-cholesterol, nutrien-rich pollack. The pollack is then mixed with cygnus, pollack roe, and various vegetables including mushrooms, bean sprouts, and watercress and boiled to create the cool yet spicy flavor of pollack soup.
